Coffee Value Assessment

SCA Coffee Value Assessment (CVA) is a new assessment framework developed to evaluate the value of specialty coffee more comprehensively. Traditional coffee evaluation relied heavily on a cupping score out of 100 points. However, SCA considers coffee value to be formed by multiple elements, including flavor characteristics, market value, production background, and consumer preferences. CVA therefore records coffee value through multiple assessment methods, allowing it to be understood in higher resolution. This approach aims to help producers, buyers, roasters, baristas, and everyone involved in coffee understand quality and value through a shared language.

The Four Assessments of CVA

Coffee Value Assessment evaluates coffee value mainly from the following four perspectives.

Physical Assessment Physical
This assessment checks physical elements that form the basis of quality, such as green coffee condition, defects, and moisture content.
Descriptive Assessment Descriptive
This assessment organizes and describes aroma and flavor characteristics as much as possible using shared language.
Affective Assessment Affective
This assessment deals with how the coffee is perceived and how preferable it is considered.
Extrinsic Assessment Extrinsic
This assessment organizes information related to the background and context of coffee, such as origin, variety, processing method, and market information.

Why CVA Is Needed

CVA is a new assessment framework for understanding coffee value in multiple dimensions rather than as a single score. It makes it possible to share coffee quality and appeal with greater transparency.
